One of the most exciting perks of going to cooking school is learning about the latest culinary trends. It's also a critical aspect of staying current in your chosen field. If you're looking for a cutting-edge cooking school, you'll do well to consider how well-versed a program is in current culinary techniques and trends.
Every year, the National Restaurant Association conducts research valuable to food industry professionals; at the end of 2008, they surveyed 1,600 member chefs of the American Culinary Federation to determine the top culinary trends for 2009. According to the National Restaurant Association, this year's top five food trends are locally grown produce, bite-size or mini desserts, organic produce, nutritionally balanced children's dishes, and new or fabricated cuts of meat.
Besides looking at culinary industry trends, it's also worth considering trends that have proven popular with consumers. The national advertising agency, JWT, predicted that 2009 would see a rise in popularity for sous vide cooking at home (a technique involving vacuum-packing food and cooking it at precise temperatures), gluten-free foods, nutrition instead of dieting, fish from certified sustainable sources, and home cooking over eating in restaurants.
In fact, due to the rise in popularity of cooking at home, more and more people are enrolling in cooking school—a trend in itself. Don't miss out—if you love to cook, do your research and consider enrolling in cooking school.
