Institute of Culinary Education

Founded in 1975 by Peter Kump, the school offers highly successful 8 to 12-month career training programs in Culinary Arts, Pastry and Baking arts, and Culinary Management and Hospitality Management. In 2008, ICE won the International Association of Culinary Professionals' Award of Excellence for Best Vocational Cooking School and ICE was also a finalist and winner of the IACP 2002, 2003 and 2006 Awards of Excellence. Finally in 2006, New York Restaurant Insider Magazine called ICE one of America's top three culinary schools.

Students and alumni are regularly nominated for, or win top industry awards, such as James Beard Awards, Food & Wine's Best New Chefs in America, and Pastry Art & Design's Ten Best Pastry Chefs.

ICE offers diplomas in three areas of study:

  • Culinary Arts
  • Pastry & Baking Arts
  • Culinary Management
  • Hospitality Management

The Culinary Arts and Baking Arts programs each include a 210-hour off-site externship, typically in a highly regarded New York Restaurant, including famous kitchens such as Restaurant Daniel, Nobu, Aquavit, Gramercy Tavern, Le Bernardin and Per Se. Students who elect externships outside of New York take advantage of ICE's national and international connections and reputation to get into the best kitchens. After graduation, ICE offers on-going job placement assistance.

ICE's comprehensive curriculum enables students to enter the culinary world in as few as 8 months. This efficiency does not come at the expense of thoroughness; small class sizes and experienced Chef-Instructors enable each student to reach her or his potential swiftly. Maximum class size is 16 students in Culinary Arts and Pastry and Baking Arts, and 20 students in culinary management and Hospitality Management.

ICE also offers 1,700 hands-on recreational cooking, baking and wine education classes to 26,000 students each year. Additionally, ICE hosts hundreds of corporate and private hands-on cooking events each year.

Diploma in Hospitality Management

The Hospitality Management program offered at the Institute of Culinary Education features a comprehensive diploma program that puts students on the fast track to a career in Hospitality Management. The 8-12 month curriculum consists of 428 hours of classroom learning in small, attentive groups and puts theory into practice with 210 hours of externship. ICE's unique educational approach consists of lecture, hands-on instruction, practical field work and project-based learning. Field trips and guest lecturers give students first-hand exposure to the industry and offer a variety of perspectives. The Hospitality Management program at ICE enables students to see the industry through the eyes of the vibrant hospitality scene in New York City. Each student will have access to a school laptop with industry relevant software to facilitate the educational process and prepare them to begin their career.

The in-school curriculum begins with an introduction to the hospitality, travel and tourism industries, and then progresses through accounting and finance, front and back office hotel operations, MIS and technology, food and beverage management, housekeeping, sales and marketing, human resources, and finally rounds off with event management and conference planning. To complete their studies, students embark on a 210 hour externship in a resort, hotel or other hospitality enterprise, where students apply their learned knowledge and skills while gaining valuable experience. This is important because it takes the theory of classroom instruction and applies it to a practical work environment.

The ICE Hospitality Management program also includes 45 hours of electives taught by ICE's award-winning Culinary Arts, Pastry & Baking Arts, Culinary Management and Wine Studies Chef-Instructors. The curriculum is focused, creative and relates to the real world. Graduates will be well prepared for the first day on the job of an entry-level management position within the hospitality industry.
