Through its strong affiliation with the American Culinary Federation and its partnership with Le Cordon Bleu International, Western Culinary Institute (WCI) has a well-deserved reputation for educational excellence. WCI is in close proximity to the Pacific Ocean, beautiful mountains, the Columbia Gorge and the burgeoning Willamette Valley wine industry. A Le Cordon Bleu education in as little as 18 months.
Students in the culinary program receive competency-based training in over 450 culinary proficiencies. All programs finish with a practical, structured externship in a property related to their career. An externship coordinator works with properties throughout the nation (and some foreign countries) to set up externships.

Financial aid for those who qualify.
Many of our students use financial aid to help with their college costs. Our friendly financial aid staff will assist you through the financial aid application process. We've helped many students just like you. Financial aid is available for those who qualify.

Western Culinary Institute is part of the Career Education Corporation network, and CEC is pleased to make placement assistance available for our graduates and alumni. Our schools have global access to candidates and job opportunities from our domestic and international sites. Le Cordon Bleu Culinary Arts - Associate's

Le Cordon Bleu Hospitality & Restaurant Management - Associate's

Our comprehensive Le Cordon Bleu Hospitality and Restaurant Management program can put you at the forefront of this exciting business.

The curriculum was established in partnership with Le Cordon Bleu and is based on the Le Cordon Bleu Restaurant Management Program developed in South Australia in 1992.

It emphasizes practical and theoretical training in hospitality management with elements of wine studies and culinary arts. While revised to reflect current local and national standards, the WCI program retains the International Le Cordon Bleu template.

Students graduating from the program will have received training for positions such as assistant manager, ma'tre d', bartender, wine steward, assistant catering manager, manager trainee and wait person. Additional experience may be required for some positions.

Le Cordon Bleu Patisserie & Baking - Associate's or Diploma

Western Culinary Institute is proud to offer both a Certificate and an Associates of Occupational Studies degree in Le Cordon Bleu pātisserie and baking. Students in both programs will receive intensive training in baking and pastry arts fundamentals; the goal is to prepare graduates with the high level of expertise necessary to become a professional baker or pastry chef.

The 36-week certificate or 51-week degree course is taught by experienced teaching professionals in this specialized field. Along with learning the fundamentals of pātisserie and baking techniques, students can develop the skills necessary to create magnificent show pieces and displays. Decorating cakes will range from simple royal icing to decoration of wedding cakes.
